Built in 1871, our city hotel "Roemer" reflects the history of the city and the region. For us, this is a mission to preserve and continue the traditions. Because those who build on tradition have a solid basis for pampering their guests with ideas, inspiration and plenty of quality.

Markus Koster
Markus Koster, a business graduate, has been managing partner of the Hotel Roemer since 1995. He is involved in the board of the Merzig Trade and Commerce Association and is a member of the organising committee of the Merzig Viezfest. In his free time, Markus Koster enjoys sport and is passionate about exploring the hilly landscape of Merzig and the surrounding area on his mountain bike.

Christoph Latz
Christoph Latz has headed the five-strong kitchen team at the Roemer since 2008. As head chef, he has dedicated himself to modern and regional cuisine.
Previous stations in his professional career were: "Zum Hoferkopf" in Bildstock, "Victors Residenz-Hotel" and "König von Bayern" both in Saarbrücken.
Christoph Latz lovingly tends his herb garden on the Roemer Terrace. The fresh herbs can be found in many dishes.

John Geppert
John Geppert has been part of our team at the Roemer since 2020 and has successfully completed his training as a hotel specialist with us. He has been a restaurant manager since 1 June 2025 and is currently preparing for his hotel management exam.
Previously, John worked as a temporary employee at the Kaminklause in Merzig, worked for several months in the kitchen of the Niedmühle in Eimersdorf and then completed his training as a specialist in the hospitality industry at the Merzig Klex.
Since 1 June 2025, he has been managing the restaurant in the Roemer with great dedication and leads a team of 20 employees, consisting of permanent staff and temporary workers.
Historisches
The "Roemer" has been closely linked to the history of the town of Merzig since it was built in 1871. For almost a century and a half, our house has welcomed visitors at the southern entrance to the town with a well-kept, solid appearance.
On the occasion of our 125th anniversary in 1996, we have documented the period from the beginning in a historical outline. It reflects a piece of Merzig's industrial history. Numerous exhibits on display in the hotel demonstrate the close historical links. We are constantly improving our Hotel Roemer in terms of our offer, service and facilities. Fundamental remodelling and extension work was carried out in 1994/95. In spring 2010, our restaurant was completely remodelled. It invites you in with its elegant, modern ambience and refined hospitality.
Our privileged location in the region, the optimal transport connections and our spacious facilities make us the ideal starting point for business trips and discovery tours in the border triangle as well as the perfect venue for business and private events.
